So now that Congress has declared Pizza a vegetable, can we call it Paleo Friendly??

How Washington lost the war on childhood obesity:  Food industry hasn’t lost a single fight with DC despite mounting evidence that unhealthy food causes obesity

You simply can’t make this stuff up!  Read this article and be amazed at how counterproductive and political the government is when it comes to school foods.  Even if you can’t read the whole article, here are two quotes that should blow you away…

“In contrast, the Center for Science in the Public Interest, widely regarded as the lead lobbying force for healthier food, spent about $70,000 lobbying last year — roughly what those opposing the stricter guidelines spent every 13 hours, the Reuters analysis showed.”

“The political battles over what children eat and drink are crucial to the nation’s health, experts say, because the tripling in childhood obesity in the last three decades foretells diabetes, heart disease and other illness in decades to come. America is one of the fattest nations on earth, and the Institute of Medicine, in a 2006 report requested by Congress, said junk food marketing contributes to an epidemic of childhood obesity that continues to rise”

Oh, why not one more…

“We haven’t reversed the epidemic,” Dr. William H. Dietz, director of the division of nutrition, physical activity and obesity at the CDC, said in an interview. “This may be the first generation of children that has a lower life span than their parents.”

Where is all this getting us as a nation?  Please pass this kind of information on to as many as you can.  The short-sightedness of a congress that can be lobbyed to the point of declaring pizza a vegetable is mind blowing to say the least (Really it’s not, it’s politics after all).  Soon I suspect Ice Cream will be declared an excellent source of calcium!

I can’t say I’m surprised, but it emphasizes again why we all have to push for the RIGHT change…

HELLO ALL!!!

Ok, so yes, I’ve been totally slacking with the blog recently.  Not because I don’t want to, simply because I’ve been trying to make lots of changes behind the scenes, and ok, I’ve been busy!

For starters I’ve changed the blog name to PaleolithicMD.  It’s also now located at www.paleolithicmd.com.   I’m working on getting a little more serious about this stuff as my consistency and belief grow in the Paleo lifestyle.  To that end I have many projects to come, but that will have to wait.  I will plan on starting up regular posts in a week or so once I get a few more things changed.

Please hang in there with me, should be fun!

Update 3/8/12

Hey everyone, been busy lately and haven’t actually done much cooking.  But, I have managed to create a few goodies.

First, I decided to experiment with Eggplant Parmesan.  I wanted to keep it rather light, so I started with the meat sauce.  I took one carrot, on onion, and two garlic cloves and I chopped them up in the food processor.  I personally like the veggies chunkier…but this is the easiest way to covertly put them in the sauce so the kids won’t notice!  Throw the Veggies into a heavy pot with a little olive oil and cook until soft.

Next add a pound of ground beef and a pound of ground veal and cook until no longer pink

Drain off the excess fat and add your favorite Paleo friendly tomato sauce.  I make my own, but you can get them at the store pretty easily…just read the label!  I also toss in a good handful of fresh basil leaves.  Mix it up, and simmer on low covered for as long as you want.  I like to let mine simmer for at least 4 hours to get it very smooth.  You can go for as little as 20 minutes though in a pinch!

Next I fairly thinly sliced up an egglant and salted each piece and placed them on paper towels. I let them sit for around 30 minutes to get a little moisture out of them

Next I cleaned some whole Okra and followed the recipe in Paleo Comfort Foods for Oven Roasted Okra.  It is so easy, and was really good.

I heated up a good bit of olive oil in a skillet and fried up the eggplant slices until golden on both sides.  No breading, just high heat!  I layered eggplant and meat on the plate, and added some finished okra on the side.  This was a definite hit with Kourt!

Another night I decided to try some fish at the house.  We don’t get much fresh fish here in Central Louisiana, so I decided to try some cod from Sam’s Club that is frozen at sea.  It was actually quite good, and I’ll be using it again.  Then I attempted to make fish tacos, without the tacos!  This recipe is also from Paleo Comfort Foods, and I suggest ya’ll check it out!  I was quite tasty indeed.  Served a little slaw on the side with red cabbage and mango dressed with a semi-sweet vinegarette!  Hope you guys enjoy, and I hope to get back to cooking a little more soon!

So, Where has Paleo gotten me over the last 6 weeks?

Greetings all, I just wanted to give a little update on how things are going now that I’ve hit the 6 week mark on Paleo.

First…My Knowledge Base. I’ve read around 5 books concerning the paleo lifestyle, and reviewed COUNTLESS blogs and blog posts. With every day I become more convinced that the evidence supporting Paleo is unmatched, and sadly, will also never be mainstreamed by the government or media. That’s just reality, folks. Big government and big business will win every time. That said, it does not mean that educated people can’t both live heatlhier lives, and try to get others to do the same. I’ll keep reading, and plan on posting some interesting facts I’ve learned about Paleo in the coming weeks.

Second…My Personal Experience. So six weeks, I’ve lost 17 pounds, never feel hungry, very rarely crave things to eat, sleep like a champ, feel more energized, and just FEEL healthier. Oh, and I stopped the blood pressure medicine I’ve taken for almost 6 years two weeks ago, and my pressure is normal. Quite amazing, it really is. This is real change folks…and it’s not hard.

Third…My Friends’ Experience. I’ve convinced no fewer than 5 friends and family to go Paleo, and they have all experienced similar results to myself. The two main constants are people sleep much better, and they are never hungry. I just don’t see how people can justify their eating habits when they feel so poorly doing so.

So, where do I stand? Well, I certainly am convinced paleo is right for me, and for my family. My kids have benefitted as well from my wife and I’s dietary changes, and they I believe also feel better, even though we are not as strict with them as we are ourselves. Also, I’ve convinced that it is right for certain patients I see at my clinic.

Fermentation

 

So, since starting a Paleo lifestyle last May, I became interested in non-dairy, or supplemental, sources of probiotics – for gut health – and discovered fermentation. Well, I didn’t “discover” it, but I’ve been experimenting with it – in the form of sauerkraut. Pretty good stuff. Above is my latest traditional-ish version. I used one head, each, green and purple cabbage, added celery seeds and caraway seeds, with ~3 tablespoons of kosher salt and let it work it’s magic for 3-4 weeks. I’ve got a new batch brewing as of a couple of days ago – purple cabbage, cranberries, apples, cinnamon, nutmeg, kosher salt – sauerkraut, my new dessert!!

My Paleo Dinners

Well, my photos, or posting abilities are not near the quality of Ernie’s, but these photos reflect some of what I’ve been preparing for dinner at our house. The top photo is a stir-fry and beet green sauté; the other bison/leftover pulled pork chili, Brussels sprout/asparagus sauté and Chinese 5-spice turnip fries. All very good!

Paleo Dinner, Kid Style

Hope all had a great weekend!  I’ve been on call…so not the most exciting weekend, but I can’t complain.

Decided to make a more Kid centered dinner tonight, and get the kids involved as well.  After I got home, I put together another batch of my Curry Agave Jerky as the first batch did not last very long!  I also experimented with some beef bone marrow stock in the pressure cooker, and it actually came out really good!  I’ll post on that later after I use it in a soup and make sure it’s suitable.

I’ve been pumping the kids up in the last week about the homemade chicken nuggets we were gonna make.  Little man bought in right away, while little lady proved wise and proceeded with caution!  So here we go.  These recipes were based loosly on the Paleo Coconut Chicken Nuggets from Health-Bent.com, and some Latin Fries that I actually turned into more like thick plantain chips.  I’m very wise in the ways of the plantain given that I’m Puerto Rican…so I got serious plans for plainains in the future.  But I digress….

Preheat the oven to 400 F

Start by putting 2 pounds of ground veal (yeah, no ground chicken at the store), two egg yolks, 1/2 cup almond flour, a teaspoon each of garlic powder and onion powder, and some salt into a bowl.

Mix it all up and ideally, get a 2-3 Tablespoon disher ready.  In a shallow plate stir together 1/2 cup of almond flour and 1/2 cup of dried coconut (not sweetened!) along with a little S&P.  Dish up consistent scoops of the meat mixture, roll into balls, and drop into the dish.  If you have kids, have them roll the balls around to cover in the almond and coconut mixture.

Heat up your FOC (Fat Of Choice) in a frying pan and put half the nuggets in.  Rotate every few minutes until all sides nice and golden.  A good crisp nugget is key to your kids buying into this whole thing.  Once they are done, transfer to a warm holding dish and finish the second batch.

 For the Plaintain chips, peel the plaintains and slice them into 1/2 inch rounds.  Toss them in some oil (I didn’t use enough this time, and they came out a little dry) and salt.  Put them in the oven for half an hour or so till they are golden.

The dinner was a hit with the whole family!  My always perceptive Syd took one bite of nugget and said “I’ll tell you two things daddy…first, that’s not chicken, second, you can make these any time you want, cause they are delicious.”  Like I said, the plainains were a little dry, but we can fix that with more oil.  I hope yall try these soon!

Oh, and I’ve stopped using my iPhone for the pictures and picked up the Digital SLR.  I’m ATTEMPTING to learn how to use this thing right to get better pictures….but the manual is longer than most textbooks….LOL

Question for everyone?

Ok, so since you have started the Paleo Lifestyle, what food or item have you found it hardest to do without?

Without question, my biggest issue is COFFEE CREAMER!!!  I can’t stand coffee without creamer, and combine that with my absolute love of coffee with it, and I’m a little lost to be honest.

I’ve attempted to make Paleo creamers from recipes on the net using coconut milk and raw egg…but I just get coconutty coffee…ugh.  I’m seriously considering using fresh whole cream, just a little, to drink my coffee.  It’s better than creamer with a million ingredients, and I think would be my most natural choice.  Or I just suck it up and learn to drink it black. 

What have ya’ll struggled with?
