Here is a great recipe for pumpkin soup:
I first reduced about 12 oz of apple juice and reduced it until syrupy. I took a link of turkey andouille sausage form whole foods, diced it and let it saute for a few minutes. I added onions, garlic, roasted red peppers, and cumin seed and let saute until onions were translucent. To that I added a can of pumpkin and the reduced apple juice. If you want the soup a bit thinner, add some ckn broth to desired consistency. I added a tablespoon of tomato paste for a bit of acid, and then for spice, i added a pinch of turmeric, salt, pepper, cayenne,cumin powder, garam masala, and LOTS of fresh sage and a bit of fresh parsley. I had a few leftover bacon crumbles from earlier and topped it with that! It was delicious but the (many leaves of) sage, cumin and garam masala are key!
